Roasted Tomato Soup

Indulge in the ultimate comfort food with this deliciously easy roasted tomato soup recipe. The rich, mouth-watering flavour of roasted tomatoes paired with a toasted bacon and cheese sandwich makes for the perfect pairing. Trust us, this will be the best roasted tomato soup you'll ever taste.




Ingredients:

2,1 kg Jam (Roma)Tomatoes, halved

1 head of garlic

10 - 15 springs of Thyme

Salt & Pepper

Olive Oil (to drizzle)

30 ml sugar

3 cups vegetable or chicken stock

7,5 ml Oregano

7,5 ml Parsley

fresh pouring cream to serve


Instructions

1. Preheat oven to 210 degrees.

2. Place tomatoes (cut & flesh side down) on a roasting tray.

3. Arrange the garlic cloves and thyme springs in between the tomatoes.

4. Drizzle with olive oil.

5. Season generously with salt and pepper.

6. Roast in oven until for about 1 hour or until the flesh looks almost burnt.

7. Remove tomatoes from oven.

8. Remove the garlic and thyme and set aside.

9. Put tomatoes in a blender, squeeze out the garlic cloves and blend well.

10. Pour into a pot. Add sugar, vegetable stock, oregano and parsley and simmer for a few minutes.

11. Serve hot with pouring cream and

freshly ground pepper and a toasted bacon and cheese sandwich.
